- 1 1/2 cup white rice or quinoa
- 1 purple carrot or beet, 1 red carrot, 1 orange carrot , shredded
- 3 cups water + 3 TBS
- 1 tsp sea salt
- sesame seeds for garnish
- Use a grater to shred carrots.
- Add carrots, rice, salt, and water to large pot. Bring to boil, then simmer until rice is cooked and no water remains.
- Serve warm and garnish with sesame seeds
