- 1 cucumber
- 1/4-1/2 cup mozerella cheese cubed or 2 string cheese
- 1 handful basil
- dash of sea salt
- olive oil and balsamic to taste
- Chop cucumbers and cheese and toss with sea salt, olive oil and balsamic.
- Finely chop basil gently into ribbons and toss gently.
- Adjust seasonings to taste
