Easy Zucchini Soup Ingredients 1 pound zucchini, sliced 2 tbs butter or ghee 1-2 cups vegetable broth salt and pepper to taste Instructions Cut zucchini into 1/4″ round slices. Sautee in a med-hot pan until golden brown on one side. Flip each piece and continue cooking until you have a nice golden brown color on both sides. While warm, blend carefully with vegetable broth, salt and pepper to taste. You can add a small handful of spinach here to intensify the green color too.
