- zest from 1-2 lemons
- appx 2 TBS lemon juice
- 6 TBS almond flour
- 3 TBS coconut oil
- 3 TBS shredded coconut
- 8 drops liquid stevia or maple syrup start with 2 tsp then add to taste
- tiny dash sea salt
- Add ingredients above and blend in a food processor.
- Taste and Adjust ingredients for desired taste and texture. Blend again.
- spread a 1/2 almond flour 1/2 coconut shred mixes on your cutting board
- Roll paste into small balls then roll balls in almond-coconut mixture and refrigerate for 3 hrs or overnight.
