This recipe is a great make-ahead dish and can be eaten as a salad, or you can also wrap it with sticky rice and nori sheets for a delicious veggie roll!
1 cucumber- sliced thin
1 bunch carrot- shredded or slice super thin
1.5 tsp mirin
1.5 tsp rice vinegar
2 tsp agave
2 tbs sesame oil
2 tbs soy sauce
sesame seeds for garnish
Wash and peel carrots. Using a grater, mandolin, or peeler, cut carrots in fine slices (carefully!). Cut cucumbers into fine slices. Whisk remaining ingredients together in a small bowl then mix with veggies.
Let sit in refrigerator for 1hr or more for flavors to meld. *Fun to eat with chopsticks
