Stuffed Eightball Zucchini

Stuffed Eightball Zucchini

Ingredients

  • Eightball Squash or Zucchini
  • 1 pound ground turkey
  • 1 medium onion
  • 1/2 cup chopped mushrooms, carrots or other veggie
  • taco spice blend: cumin, corriander, paprika...
  • 1 1/2 TBS worstchestire sauce
  • 1 1/2 TBS tsp soy sauce
  • Sea salt
  • 2/3 cup shredded cheese, Divided
  • 1/4 cup bread crumbs

Instructions

  1. Scoop out seedy center from squash and set aside [ for long zucchini , cut in half first, for round zucchini, cut top off first].
  2. Preheat oven to 375.
  3. In a large pan over medium heat, saute onions in olive oil until translucent. Add other veggie and stir.
  4. Then add Turkey, Worcestershire & sauce, soy sauce and cook, stirring frequently until the meat is cooked all the way through.
  5. Turn off heat and sprinkle half of shredded cheese over the top of the turkey mix.
  6. Stuff the squash with the turkey mix then top with cheese and breadcrumbs.
  7. Cook for approximately 35 minutes until squash is fork tender and cheese is golden on top.
