  • spring roll wrappers or nori sheets
  • carrots peeled and cut into matchsticks
  • 1 avocado thinly sliced
  • 2 Nectarines thinly sliced
  • Lettuce Leaves
  • 1-2 cucumber Shredded and drained
  • Shiso leaves or mint , cilantro, etc
  • Peanut Sauce or Dipping sauce of choice


  • Add a bit of each filling (approximately an eighth) to bottom third of wrappers and top with a few herb leaves.
  • Fold bottoms of wrappers over filling, then gently roll and tuck wrappers over filling to cover.
  • Fold in sides to seal, then roll until completely sealed.
