  • 1 cup bell peppers chopped into tiny pieces
  • 1 cup cooked chicken breast or seitan chopped/shredded
  • 1/2 cup mayo or veganaise
  • 1/4 cup cranberries chopped
  • 1/4 cup pecan pieces chopped
  • 1/2 tsp light curry powder
  • 2 tbs chopped chives or green onions
  • salt and pepper


  • Rinse and bell peppers into tiny pieces and add to a large mixing bowl
  • Shred the cooked chicken breast into the bowl
  • Add cranberries and pecans, then toss all the ingredients together with the mayo, curry powder, salt & pepper. Stir well then fold in chives.
  • Adjust mayo, curry powder, salt/pepper to taste
