Roasting the rainbow carrots helps the flavors caramelize and adds sweetness


  • 1 pound bunch carrots
  • 2 TBS olive oil
  • 1/2 tsp. kosher salt


  • Set the oven to 400°F.
  • Put the carrots on the cutting board cut them in halves or lengthwise (or quarters depending on thickness of carrots)
  • Move carrots to baking sheet and add the oil and salt and rub the oil and salt on the carrot pieces until they're all lightly coated with oil.
  • Place the baking sheet into the oven and bake until the carrots are tender and golden brown, about 30 minutes. Toss midway through
  • Serve right away.
