  • 1 head cauliflower chopped
  • 2 teaspoons extra-virgin olive oil divided
  • 3 tbs butter or earth balance
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste
  • Snipped fresh chives for garnish


  • Place cauliflower in pan with water. Bring to boil and cook 12 to 15 minutes until fork-tender.
  • Drain water and return to pot and add 2 teaspoons oil, butter, salt and pepper; Use immersion blender to process until smooth and creamy. [ or do this step in a food processor]
  • Taste to see if it needs more butter or salt, or you can also add 1/3 cup of buttermilk or soymilk to make it extra creamy
  • Transfer to a serving bowl serve warm
