  • 2 lipstick peppers halved
  • leek halved
  • Potatoes quartered
  • 2 heads of garlic chop off top, drizzle with olive oil, wrap in foil


  • Arrange peppers, leek and potatoes in baking dish.
  • Drizzle with olive oil, salt and pepper.
  • Toss to make sure all veggies are coated.
  • Bake at 400 for 40-45 minutes stirring at least once.

Optional: blend all roasted veggies with 2 cups vegetable stock and enjoy as soup!
