heads of garlic
chop off top, drizzle with olive oil, wrap in foil
Arrange peppers, leek and potatoes in baking dish.
Drizzle with olive oil, salt and pepper.
Toss to make sure all veggies are coated.
Bake at 400 for 40-45 minutes stirring at least once.
Optional: blend all roasted veggies with 2 cups vegetable stock and enjoy as soup!
