  • 1 bunch carrots tops removed, rinsed chopped into 2" pieces
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 1/2 TBS curry powder
  • 1 tbs Maple syrup
  • salt & peppers to taste


  • You can puree all the ingredients in a Vitamix and allow the friction to heat up the soup, or alternatively, you can combine all the ingredients into a pot and simmer until carrots are soft. Then transfer to a blender or use an immersion blender and adjust salt & papper to taste.
  • Serve warm with toasted sunflower seeds on top-mmm!
