  • 1 1/2 cups quinoa
  • 3 cups water
  • 1 bunch beets
  • salt and pepper
  • 1/2 tsp cumin


  • Remove green tops from the beets (and use them for another recipe- they're delicious!!); wash beets, peel , and chop into very small pieces, about the size of jelly beans or smaller.
  • In a medium pot add all ingredients, cover, and bring to a boil.
  • Reduce heat and simmer for 15-18 minutes until quinoa is fully cooked.
  • Enjoy your pink quinoa and top with any of your favorite ingredients like slivered almonds, crumbled goat cheese, etc etc
