Rinse and chop all veggies.
In a large pan over medium heat, add 3tbs oil + 1 tsp sesame oil.
Sautee ginger and garlic over medium heat for 1 minute.
Add broccoli, peas, carrots/celery and cook over med-high heat until tender, about 6 minutes. (Optional- pan with lid will reduce cooking time).
***If ingredients start to stick to the pan, add 1 Tbs of water at a time over to pan***
Add baby spinach (or chard, chopped) and cook until completely wilted.
Add the soy sauce, tasting for salt as needed. Or teriyaki sauce is great too!!
Serve warm with rice
